Why Katy's Barking Gecko ?!

I love to travel, I love to cook and to try new recipes...

After returning from yet another trip to South Africa I browsed one of my Food Magazin subscriptions and

we started to envision how it might be to have a small, a very small restaurant. Somewhere in Australia or

South Africa.
Maybe 4 or 5 tables.
To be in the kitchen wearing t-shirt, shorts and flip-flops cooking for fun and nice people....

Doesn't that sound great ?!
We even came up with a name: Katy's Barking Gecko

Well there is no restaurant (so far....), but heaps of favourite recipes.

Coconut Macaroons / Kokosmakronen



These are very easy to prepare and are delicious...

Ingredients


3 egg whites
80 g of sugar
2 teaspoons of lemon juice
175 g grated coconut



Method



Beat the egg whites until very stiff. Gradually add the sugar, then stir in the lemon juice. In the end gently fold in the shredded coconut.

Use 2 teaspoons to put small heaps of the mass on a baking tray. I always use baking paper to line the tray.
Then place the macaroons in the preheated oven at 150 ° C. Bake for about 20 minutes. They should only get slightly brown.
After they are done, just let them cool down for a little while and...... enjoy!

And another great thing is, if you know someone who needs to avoid gluten, this is a perfect Christmas treat.....
